Downloading a nice variety of farms is a good start too

I would suggest getting a good terrain and tree controller mod. You can find some good ones of these by searching c.p. in the LEX

You might want to take a look at PEG's MTP series here (You will need to register) These are a bunch of lots that are themed for mountain/rural areas.

I would also recommend downloading these goodies given by David (DEdgren) on his MD here. There are some nice ploppable farms you should use along with extra farms as XiahouDun suggested. You should be able to find some by searching farming in the LEX

You have already mentioned you have the RHW, but I would also suggest downloading the SAM because it allows you to make some rural/dirt streets that look great in rural environments.

Those along with Chrisadam's Rural Renewal Project should be what you need
