Yes, i GENERALLY do like the FLEX pieces more, but there have been times when, if you destroy the wrong road piece, it wipes out the whole piece or makes it impossible to use. But i do agree this is the way to go.

That is also an issue with puzzle pieces.

With flex pieces however you can use the dis-connector to just take out one tile without affecting and disrupting the work you have done.

It is in the RHW menu.
